Of the character of the malt, Stephanie Macleod, master blender at Dewar's and master maltmaster at Aberfeldy, once said that "it all goes back to the politics of the new brewing spirit," which comes out of the copper stills as a clear liquid. before seeing wood, and the “aroma of grass, fruits and grains” that permeates the distillery.
“When you have a glass of Aberfeldy, you are almost transported there.”
But the combination of “a good new spirit”, good casks and the right amount of time and rest in these casks” is what really makes Aberfeldy great.

Built 125 years ago by the sons of the brand's founder, John Dewar, the Aberfeldy distillery near Speyside is the only Scotch whiskey distillery ever built by the Dewar family, and the whiskey it produces is one of the "heart malts" of the well-known Deward's Blended whiskey.
The site of the distillery, just five miles from John Dewar's birthplace, was originally a brewery. More importantly, it has a world-class water source, Pitilie Burn, known for having deposits of gold (gold is still mined there today), from which whiskey is made.
This matches well with Aberfeldy's golden honey notes, hence why it is known as "The Golden Drink."

Besides creating rare, pure and enlightened whisky, they have a deep commintement with Fettercairn Forest, rooted in their home, the land, and its people – and it’s growing more than purely Scottish oak trees. It’s helping to grow skills and businesses in local community, too.

Benriach is one of two remaining distilleries in Speyside that distills whisky using malted barley from its own floor maltings, celebrating a tradition that began when John Duff first founded the distillery in 1898.

For most of the year they source Scottish barley malted in Speyside to make Benriach whisky, however for one month each year local Scottish barley comes to the distillery and they celebrate the ancient tradition of malting the barley by hand at the historic malting house floor. They call it “Malting Season.”
