The first single malt distillery recently opened in Scotland's capital in a century, the Port of Leith Distillery, founded by Ian Stirling and Paddy Fletcher, a vertical distillery, meaning that some small parts of the production process can be fed by gravity.
The still room, with a stunning view of the Firth of Forth, is the perfect place to dream of an incredibly complex and balanced spirit, delicious and seductive flavors held in perfect harmony.
Port of Leith is beginning its path to achieve this, with the commitment to create a unique whiskey that will never stop.

It has been ten years since two lifelong friends first had the idea to build this distillery, the first Single Malt distillery to be built in Edinburgh in a century.
Finally, the building was open to guests from October 11, 2023.
A vertical distillery, something rare in the world of beverages and spirits, but that is exactly what the Port Distillery is of Leith.
The brand was created by wine merchant Ian Stirling and finance director Paddy Fletcher, and celebrated the opening of its Edinburgh headquarters and distillery with a design by Glasgow-based architects ThreeSixty.

Holyrood Distillery was established in 2019 in the center of Edinburgh's Old Town, just steps from the Royal Mile, with an innovative approach to distilling, inspired by Edinburgh's rich brewing history.
They recently released their first Single expression Malt called “Arrival”, which embodies their history so far as whiskey makers and marks the beginning of a journey of progression, innovation and experimentation.

Known as 'The Craft Distillery', it is located in the center of vibrant Tobermory, the capital and until 1973 the only town on the Isle of Mull in Scotland's Inner Hebrides.
They developed a unique and expressive style of Hebridean whiskey, producing Tobermory unpeated whiskey and Ledaig peated whiskey, both Single Malts, and Tobermory Gin.

Tobermory Single Malt is distilled from unpeated malted barley and matured in oak casks for at least ten years.
A heavily peated whiskey is also produced, but in small quantities, called Ledaig after the original name of the distillery.
The name Tobermory is derived from the Gaelic Tobar Mhoire, meaning "Mary's well", in reference to to a well located nearby that was dedicated in ancient times to the Virgin Mary.

This is my new painting about Holyrood Distillery, an exciting new attraction, single malt whiskey distillery, which opened in the heart of Edinburgh in 2019.

Its first single malt whiskey will soon be officially launched on Friday 6 October 2023, “Arrival” is one of the first single malt whiskeys produced in Edinburgh in a century, with experimentation and innovation, inspired by the rich brewing and distilling heritage of Edinburgh.
